The cultivation on the farm of Castiglionchio is typical of this area of the Tuscan hills: Vineyards and olive groves. The farm lands total (around ) divided as follows:
For many years one of the priorities of Castiglionchio has been to put nature at the forefront. Wool is used to fertilize both the vineyards and olive groves. The restaurant utilizes fruit and vegetables grown on the farm guaranteeing fresh, tasty, home cooking. The water supply comes from a natural spring and of course solar panels are used to heat the water. A photovoltaic system is in employed for producing energy. The total production of wine is around 243,800 bottles per year.
The olive groves form a frame around the vineyards and represent an important element in the Tuscan landscape. The olives are harvested at the right point of maturity, using an innovative system. The trees are positioned in an area particularly suitable for olives due to the altitude and quality of the soil. The olive oil has a rich, fresh perfume and keeps well due to it's low acidity only 0.18%. The fragrance, aroma, and fruity flavour along with the intense green colour create a unique harmony. Our 6200 trees produce 14,000kg of olives and 2,000kg of extra virgin olive oil per year
Every week we organise a guided tour of our farm, visiting amongst other places, the country life museum, the antique olive press, the wine cellars as well as the 15th century chapel. We'll also tell a few secrets of traditional farmhouse cooking and let you sample the wine, Vin Santo, Grappa and extra virgin olive oil.
